Tomato and Mushroom Herb Bruschetta

On Saturday Sam and I had friends over for dinner – apparently my bruschetta was a big hit and there are people who would like the recipe. So here it is =)

Ingredients

  • Cherry Tomatoes
  • Fresh Basil
  • Fresh Thyme
  • Mushrooms
  • Soya Sauce
  • White Onion
  • Red Onion
  • Garlic
  • Salt and Pepper to taste
  • Fresh Bruschetta bread
  • Garlic olive oil
  • Parmesan cheese

Method

  1. Finely dice the white onion and garlic. Chop the mushrooms roughly and cook the mix in the frying pan until the onion turns clear. Add a splash of Soya Sauce to the pan and stir thoroughly.
  2. Dice the tomato and red onion, along with the fresh herbs. Add them all to the frying pan and cook for a further 1 minute, until all ingredients are warmed through. Add salt and pepper to taste, and serve on fresh bruschetta with garlic olive oil and grated parmesan.
